I am currently in a program at my university that requires me to take a 5-7 month internship. Is it possible to get accepted for a back-to-back internship for the Spring 2013 and Summer 2013 in the same over seas embassy? Or does the State Department change interns at foreign embassies every season?

Yes, it would be possible. You would need to apply for both internship seasons separately.
